I have been an entrepreneur since 2004 and full-time employed by myself since 2007. I've been lucky enough to be able to work with some amazing people over the years in multiple projects and also ended up founding a number of different kinds of restaurants in Helsinki.
Located inside a massive shopping center Mall of Tripla, Pasila on the 5th floor. Flavourium is a combination of a sightseeing dining restaurant, cocktail bar and a multi-sensory event venue.
Sightseeing restaurant caters settings from the worlds most interesting locations and tasty destinations in one sitting. On the product side our speciality is to pair food with cocktails, and of course with or without alocohol.
The One Bar explores cocktails as a form of modern art. Our culinary approach to drinks is quality-conscious, experience driven and sociable. The One continues where the legendary A21 left off. The name refers to the one and only bar, this is what we aim to to be amongst the wide variety of bars around us.
A21 Cocktail Lounge, as it was originally named, opened its doors for the first time on the 23rd of September 2007. The concept of the bar was to be an extension of a living room where you had to ring the doorbell to get in, as you do when you go and visit your friend. A21 stands for apartment 21 and that welcoming atmosphere was part of the concept. Inside was a stylish venue with full table service and creative cocktails made with the best ingredients. This type of a lounge concept was revolutionary at the time in the Finnish market. When A21 opened it doors it was the only place with a lounge term as part of its marketing name.

Flavours on the plate and in the glass?
How about a cool cocktail with your dinner? The first encounter with the idea of pairing food with cocktails came in 2004 when there was a cooperation dinner in Ilmatar restaurant located in the Klaus K hotel as part of Eat & Joy Festival. K17 Kitchen Cocktail was established to be a research laboratory and a restaurant in autumn 2010. The whole idea was to pair food with cocktails, which led to multi-course dinner model and delicate flavours that enabled work with different cocktails.
Two kitchens - Two maestros. A chef and a bartender. A restaurant where every dish is designed with a matching cocktail. This was the idea where it all started from. In order to demonstrate the possibilities of cocktails and to enable food pairing, it was decided that the restaurant has a set menu of seven courses which changes seasonal. Restaurant was named A21 Dining and ran from 2010-2016. It showcased a high level of cooking & experimentation and was invited also to Madrid Fusion to demonstrate the approach 2015.

In the heart of Teurastamo, the old abattoir area you can find Kellohalli. The area is a part of historical Helsinki transformed into an urban hot spot as Meatpacking district is in New York City. The pulsating heart of Teurastamo is Kellohalli, old organizing hall of the abattoir which operates as an event place, restaurant and a popular lunch place.
